Turkey Lasagna
 


Ingredients (serves 6):
  • 9 long lasagna noodles(8oz)
  • 1 package ground turkey – Jennie O is a good brand
  • 2tsp fresh minced garlic(or bottled)
  • 1 jar 28oz – marinara sauce
  • 1 container(15 oz) non-fat ricotta cheese
  • 1 large egg
  • 1 10-oz pkg frozen, chopped, thawed spinach
  • ½ tsp crushed red pepper flakes
  • 1/8 tsp nutmeg
  • 2 cups(8oz) shredded part-skim shredded mozzarella
Steps:

Heat oven to 350. Cook Noodles according to package directions. Meanwhile cook turkey and garlic in a large fry pan over med heat until turkey is no longer pink, stir occasionally. Add marinara sauce and allow simmer for 10minutes, stir occasionally. Combine Ricotta Cheese, egg, spinach, pepper flakes and nutmeg – mix well
Spread ½ cup marinara mixture in bottom of a 13x9 inch-baking dish. Layer ½ of noodles over sauce, spoon cheese mixture over noodles. Spoon 1 cup sauce over cheese; repeat layering with rest of noodles, cheese mixture and sauce. Cover with foil; bake 50min or until bubbly. Sprinkle mozzarella cheese over lasagna; return to oven and continue baking 5min or until cheese is melted

Serve with side salad and dinner roll and a glass of red wine
