Wheat-free, dairy-free banana muffins
 


These wheat-free, powerful muffins are hardy bits of nutrition and energy for a day of work and play. They are high in Omega-3's and can be adjusted according to diet needs. Use organic ingredients and make a special treat.

Ingredients
(Makes 24 muffins):
  • 2 cups brown rice flour
  • 1 cup walnut meal
  • 2 cup soy flour
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 4 tsp baking powder
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1.5cup flax seeds
  • 4 egg whites
  • 1 cup ripe banana(approx. 2)
  • ½ cup chopped dried fruit
  • Olive oil to grease pan
