Big Summer Salad
As summer hits it can be hard to be over the stove preparing dinner – for a light dinner this dish is a great way to get a good source of protein, great source of color to ensure you get all the necessary micronutrients and a great source of good essential fatty acids!
Use this to get some ideas and allow it to act as a base to create your favourite summer salad – such as adding almonds, orange juice to the dressing and even mango!
